Lobio nigvzit, also called lobio nigozit, is a Georgian stew featuring red kidney beans and walnuts. This recipe is an easier version of the traditional way, but it’s still delicious and full of flavor.

Ingredients:

  • 2 cans of Talia’s Red Kidney Beans
  • 1/4 cup corn oil
  • 1 yellow onion, chopped
  • 4 cloves of garlic, minced
  • 1/2 tsp. fenugreek
  • 1/2 tsp. ground coriander
  • 1 tsp. kosher salt
  • 1 cup walnuts, chopped
  • 1 cup cilantro, chopped

Instructions:

  1. Heat the oil in a pan over medium-high heat. Sauté the onions and garlic until golden brown. Drain most of the liquid from the canned beans and add into the pan.
  2. In a mortar and pestle, grind the fenugreek. Add into the pan along with the coriander and salt. Stir the mixture to combine then reduce the heat. Cook for 3-4 minutes. Taste and adjust the seasonings to your liking.
  3. Before serving, garnish with chopped walnuts and cilantro.
