This falafel salad is just the thing for when you’re craving Middle Eastern food but don’t have the time or energy to prepare an elaborate meal. Use our falafel mix and have delicious, crispy falafel patties in just minutes and with no additional ingredients. Top it off with a nutty, creamy tahini-lemon dressing and serve with a side of hummus.

Ingredients:

  • Salad Ingredients:
    • 1 box of Talia’s Falafel Mix
    • 2 Persian cucumbers, chopped
    • 4 cups green leaf lettuce, chopped
    • 1 cup cherry or grape tomatoes, halved
    • 1/4 cup red onion, diced
    • 1/4 cup Talia’s Kalamata Black Olives, halved
    • 2 tbsp. fresh parsley, chopped
  • Dressing Ingredients:
    • 1/4 cup tahini
    • 1 clove of garlic, minced
    • 1 lemon, juiced
    • 1/4 tsp. fresh dill, finely chopped
    • 1/4 tsp. fresh parsley, finely chopped
    • Salt & pepper, to taste
    • Water

Instructions:

  1. Prepare the falafel according to the package instructions. Set aside the finished falafel for later.
  2. To make the dressing, add the tahini, garlic, lemon juice, dill, and parsley into a jar. Seal with a lid and shake well to mix. Season to taste with salt and pepper. Add in more water as needed if a thinner consistency is desired.
  3. Add the lettuce into a large salad bowl. Pour over the dressing and toss to coat the leaves.
  4. Top with tomatoes, cucumber, onions, falafel, olives, and parsley.
  5. Drizzle with more dressing and season to taste with salt and pepper.
