Freshly baked rolls are a staple at any holiday dinner. If you’re looking to upgrade your rolls this year, try out this recipe for fluffy buns with za’atar, which is a delicious mix of various herbs and spices.
Dough Ingredients:
- 2 cups all-purpose flour
- 1 cup bread flour
- 6 tbsp. olive oil
- 1/2 tsp. salt
- 2 tsp. active rapid rise yeast
- 1/4 cup warm water
- 1/2 cup milk (or plant milk)
Za’atar Mix Ingredients:
- 1/4 cup Talia’s Green Za’atar
- 1/3 cup olive oil
Instructions:
- Mix together warm water and yeast in a small bowl. Leave for 5 minutes.
- In a separate bowl, add in the flours, salt, milk, oil, and the yeast mixture from the first step.
- Knead the dough on a floured surface for about 10 minutes or until smooth.
- Transfer the dough into an oiled bowl and cover with a towel. Put the dough in a warm place for about 2-3 hours or until the dough has doubled in size.
- After the dough has risen, punch down the dough. Transfer back onto the floured surface and roll it out into a rectangle.
- Mix the za’atar and olive oil together in a bowl. Then pour the mixture over the dough and spread it out evenly to the edges.
- Take one side of the dough and roll it up into a log. Cut up the dough into 16-18 pieces.
- Place the rolls onto a baking sheet lined with parchment paper. Cover again with a towel and leave in a warm place for another hour.
- After 30 minutes, brush olive oil or melted butter over the tops of the rolls. Re-cover for the remaining 30 minutes.
- Preheat the oven to 350°F.
- Bake the rolls for 30 minutes or until the edges are golden.
- Let cool slightly before serving.
