It’s common to use legumes in savory dishes, but you can create sweet treats with them as well. If you’re craving something sweet and indulgent but want to watch your sugar intake, then this is the recipe for you. It’s incredibly easy and only requires 3 ingredients! You can even make this vegan-friendly by subbing out the chocolate for vegan chocolate.

Ingredients:

  • 1 can of Talia’s Chickpeas, rinsed and drained
  • 1/2 cup almond or cashew butter
  • 1 cup dark chocolate chips
  • 1 tsp. coconut oil (optional)

Instructions:

  1. Add the chickpeas and nut butter into a food processor. Blend together until completely smooth, about 1 minute.
  2. Pour the chocolate chips into a microwave-safe bowl. Microwave in 30 second increments to melt, stirring in between. Add in coconut oil if necessary to make the chocolate smooth.
  3. Add the melted chocolate into the food processor with the chickpea mixture. Blend for an additional 1-2 minutes or until smooth.
  4. Using a cookie scoop or spoon, scoop out even balls of the batter. Place onto a baking sheet lined with parchment paper.
  5. Let the balls harden in the freezer for about 15 minutes. Remove from the freezer and re-shape into smooth balls. Place back in the freezer for 10 minutes to re-harden.
  6. Melt more chocolate in the microwave. Once the balls have hardened, remove from the freezer and dip into the melted chocolate. If desired, sprinkle some shredded coconut or other toppings (nuts, berries, etc.) on top before placing them back into the freezer to completely harden.
