This dish is a simple but hearty stew featuring fava beans and chourico, a Portuguese sausage. If you are not able to find chourico, you can always substitute it for another type of sausage, such as salami or chorizo. Or if you prefer to not eat meat, you can leave it out altogether and still get a tasty but filling stew.

Ingredients:

  • 2 cans of Talia’s Plain Fava Beans, drained
  • 2 tbsp. olive oil
  • 3 large onions, chopped
  • 2 cloves of garlic, minced
  • 1 tbsp. chili paste
  • 1/4 cup tomato sauce
  • 2 cups water
  • 3 tbsp. parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • 3 tbsp. paprika
  • 1 lb. Portuguese chourico sausage, casing removed and sliced

Instructions:

  1. Heat the olive oil in a saucepan over medium heat. Sauté the onions and garlic until golden brown.
  2. Add in the chili paste, tomato sauce, water, parsley, paprika, and sausage. Season to taste with salt and pepper and stir.
  3. Turn the heat up to high and bring to a boil. Then reduce the heat and simmer for 40 minutes.
  4. Pour in the fava beans and cook for an additional 10 minutes.
  5. Garnish with more parsley and serve with crusty bread.
