Ful medames is a dish that originated in Egypt, but has spread to many other countries. Each country has their own way of preparing it, but they all share the same main ingredient: fava beans.
Ingredients:
- 1 can of Talia’s Plain Fava Beans, rinsed and drained
- 2 tbsp. olive oil
- 3 cloves of garlic, minced
- 1/2 cup red onion, finely diced
- 1 tsp. Ethiopian Mitmita
- 1 tsp. Berbere spice
- 1 cup water
- Salt, to taste
- 1 stalk green onion, chopped
- 1 large tomato, diced
- 1/2 cup roasted mushrooms, chopped
- Red chili, finely chopped
Instructions:
- Heat olive oil in a large pan over medium heat. Saute the onions and garlic until soft. Add in the mitmita and berbere spice and cook for another minute.
- Pour in the water and fava beans. Simmer for 5 minutes.
- Remove the pan from heat and mash up 1/2 of the beans (or more, depending on your preference).
- Season to taste with salt. Return the pan to heat for another 2 minutes, stirring constantly.
- Drizzle with more olive oil and top with green onions, tomatoes, mushrooms, and red chili.
- Serve with bread rolls.
